Yummy Salad!!!


Some friends had us over for dinner and we had this salad. Hands down one of the best salads I have ever had! Yummy!!
The photo was taken on mother's day at Jenny Lake. If you are coming to run one of the Teton races in Sept. you can tell it will be a beautiful spot to run and to bring your family.

I am sore from my track work!!!
Long workout on Sat...back pack and all up and over the Teton Pass..not sure how many times yet!!!!

Salad Recipe –
Baby greens with Asparagus and Pistachios

Lemon Vinaigrette:
3 tbsp. fresh lemon juice
2 tbsp. lemon oil
¾ tsp. honey
¾ tsp. sherry vinegar
¼ tsp. salt
1/8 tsp. fresh ground pepper

Salad:
1 bunch asparagus, trimmed and cut into 2in pieces
½ c. fresh fava beans
8 ounces mixed baby greens
½ c. shelled pistachio nuts, coarsely chopped

To make vinaigrette, in medium bowl, whisk together all ingredients until blended.
To make salad: bring large pot of lightly salted water to a boil. Add asparagus; cook until just tender, about 3 minutes. Drain in colander, rinse with cold water until cool, and then drain again. Repeat with beans, cooking about 1 minute before draining.
In large bowl, combine greens, pistachios, asparagus, and beans. Add vinaigrette and toss.

Found you online when I frantically googled a yummy salad recipe in Canada !!! Loved the salad infact I wasn't able to find lemon oil anywhere !! Any other great salad recipes I'd love for you to post them !! Big hugs from a Vancouver girl -- Angela--
